Father's Day at Bonefish Grill for Chef Paul Prudhomme's Creole-Style Redfish

I have loved working with them through the years. so I had the idea of checking out the New Orleans Creole Blackened Redfish recipes by Paul Prudhomme, one of my favorites, and sharing my own thoughts and opinions with you! I'm sharing my full scoop with you here.

The seasonal specials available through June 19^th . . . make your Father's Day plans now! You'll be thrilled! We arrived for an early lunch which was my Birthday lunch! It was ideal! We love the casual yet upscale atmosphere at Bonefish! 

The fresh fish experts at Bonefish Grill are spicing up summer with their new Creole-Style Redfish. Melding tastes from around the world for over the last 300 years, New Orleans creole cuisine is gaining popularity across America. As a leading tastemaker, Bonefish Grill is ratcheting this old world cooking up to new world tastes.

Redfish itself is a new type of fish on the polished casual favorite’s menu. The mild sweet fish with a medium firm texture was introduced in the 1980s in the New Orleans kitchen of famed Chef Paul Prudhomme. Bonefish Grill’s Creole-Style Redfish is topped with crawfish — a fresh water crustacean similar in taste to lobster and very popular in the South — then accented with a creole-style sauce and served with sweet corn spoonbread.

This dish took me back to New Orleans! 

Here is our Redfish dish! We are crazy for the Bonefish Garlic Mashed Potatoes so they were our side of choice with the incredible Blackened Redfish and Creole Crawfish sauce! 

Bonefish Grill is spanning the globe of culinary inspiration for other items on its new seasonal menu, including:

·         Crab Cake Topped Wood-Grilled Atlantic Cobia – for a new twist, Bonefish Grill creates a delicious combination of flavors, pairing a popular starter with an interesting fish offering a rich, sweet flavor that is slightly firm, with a light flake. Served with a jalapeño bacon cream sauce it is finished with jalapeño slices and served with jasmine rice and French green beans.

Because this New Orleans girl loves her Red Fish, and Bonefish Grill wants their customers happy, they let me substitute Redfish with their Crab Cake! Heaven indeed! It was an incredibly delicious pairing! I love their steamed broccoli and potatoes au gratin to round out the meal! By the way, the jalapeño was the perfect seasoning. Truly just an accompaniment. 

·         Fresh Maryland Soft Shell Crabs - a delicacy only available a few weeks of the year, the Soft Shell Crab is sautéed crispy, stuffed with a Maryland-style crab cake and served with choice of two fresh sides.

·          Cedar Plank Norwegian Salmon –Sourced fresh from Norway, this Atlantic Salmon family is higher in fat content, Omega 3 fatty acid and has a velvety texture. Roasted on a western red cedar plank from the Pacific Northwest it is topped with a fresh, light citrus, honey-based glaze and served with a vegetable medley of asparagus, spring peas, pearl onions and button mushrooms.

·         Kate's Wild North Atlantic Haddock –This nostalgic favorite of loyal Bonefish Grill guests features this mildly sweet, wild white fish — cut in-house — garlic crumb dusted, wood-grilled, topped with feta and a lemon basil butter sauce.

Let me tell you how our teen sons love Bonefish Grill! They pretty much sum up our family spirit at Bonefish! Happy! :)  We paused for a moment before we were seated.

Our feelings exactly! :) I was so happy to get to spend my Birthday at Bonefish! Perfect timing and Thank you Bonefish Grill Cary! They served me their signature Dark Chocolate with pecans! Another favorite! 

                             

Bonefish Salads are excellent as well! The lemon vinaigrette with pine nuts was something I wish they sold in a bottle! :) 

                                

Bang Bang shrimp with green beans is one of our son's favorite things! 

A classic Bonefish Grill Half-Pound Wagyu Beef Burger* toasted brioche bun, fully dressed with sharp Cheddar and special sauce, add bacon is a favorite in our family, too!

Celebrating the Father's in my Life

Celebrating the Father's in my life today. You've heard it before and once again I will say I am thankful for Mountain Man and his natural inclination to teach our children. Growing up I had an amazing example in my own father - Daddy. He lived more in his 46 year life than most ever will. The impact he left is alive and well today. Thank you Lord for the blessing of my Daddy and Husband.

This was really neat Proclamation I found by Former President Bush's on Father's Day so I'm sharing:

"Fathers play a unique and important role in the lives of their children. As mentor, protector, and provider, a father fundamentally influences the shape and direction of his child's character by giving love, care, discipline, and guidance. As we observe Father's Day, our nation honors fatherhood and urges fathers to commit themselves selflessly to the success and well-being of their children. And we reaffirm the importance of fathers in the lives of their children. Raising a child requires significant time, effort, and sacrifice; and it is one of the most hopeful and fulfilling experiences a man can ever know. Father's Day Gifts 2009

As promised, here's Father's Day from Mountain Man's perspective. Aside from Mountain Man's usual list: Family, family time, outdoors enjoying creation. Here's the list for 2009.

1. Ted's Montana Grill - we can most likely thank Mountain Man's Colorado roots for his love for all things Bison. And Ted's Montana Grill is amazing. The lean buffalo meat is outstanding even to Carolina Mama.

2. Mountain Biking - Surprise. Anything Mountains and/or Bike related. So any time he can get on his Mountain Bike, he is in his element. Most often he loads up the four of us and off we go. Other times, he rides with the guys.



3. Timex Iron Man - A man and his sports watch. Need I say more. And I have been a fan of the female "Iron Man" for many years and it is a constant in my workouts and life. Consistent. Performance. Great. It does it all - especially you can enjoy the patented Indiglo feature.

4. Swiss Army Knife. A man and his tools. His knife. A classic right of passage. Make sure your man has one. You'll be glad.



5. UNC Tar Heels - treading lightly here after the [loss] last night in the World Series... always all things UNC Tar Heels. So Mountain Man's collection gets kicked up a notch. There's even a 'need' in there with all the fun.

6. Music. Mountain Man has impecible taste in music. Cliassic. Christian & Gospel. Worship. Fun. And his Guitar skills are coming right along. [girls, stay tuned ! ;) ]

7. Star Wars. Star Trek. I may be 'marrying' my Stars... but there is a game here. Details are found at the iTunes Apple App Store. He loves it. Knows it's coming. Anticipates it. Need I mention more.




9. The Noticer. Great read - Mountain Man is a reader. The Noticer is amazing and delightful and encouraging and endearing all at once. I wrote about it here - somewhere. Cards from the Tigers. And they are adding the Japanese Origami fun this year. They are crazy for Origami now and so are we. They surprise us often with these lovely creations.

10. Carolina Mama Cooking. Mountain Man will chose a favorite meal from the Carolina Mama repertoire. Cooking is at the heart of our home and family. We cook together, eat together, at home, at our dining room table. Or there's always Pizza night watching the likes of Pooh Bear like we did last week.

BONUS: Time. Family time, family, family. And Mountain Man was encourage Family, Faith and Fun. {Where do you think I get it? We encourage each other there.]
