Best Birthday Chocolate Cake with No Sugar “The Younger We Get”

Dear Friends! We did it! Almost….this pandemic is in our rear view mirror! Praise God! This year, I got to celebrate my birthday doing things with family and friends! It was so great. (I know, all the exclamation points. We should be able to do that now, right.) 


My “35th” birthday was a blast. The younger we get….  I know since I got your attention with the Best Birthday Chocolate Cake with No Sugar, I’ll get to that most important contribution to the internet in long time. 

                                     

Seriously, y’all know we love cakes around here, all the cakes, homemade cakes. So, since it was my birthday and I was ready to try a ‘sugar free’ cake, I did. I figured if I messed it up, it’s just my cake not my husband or the boys. :)  And you know what it was FANTASTIC and DELICIOUS! 




The family had the best party! And missed our son who is serving as a worship leader this summer1 


And my sweet Boulder Mt. Man and I made the cake together! Do you love our Food Blogger kitchen! 


He grated a 1/3 of this baking bar for the top of the cake. It was perfect! 


Another year younger and loved the cake and our little party! God is good all the time and I am so grateful for every moment of this life! May mine glorify Him. And May you love this cake as much as we did! 




Best Birthday Chocolate Cake with No Sugar, No Gluten 

1 1/2 cups Bob’s Mill Gluten Free Flour 1:1 ratio
1/4 c. + 2 T. Dark Hershey’s Cocoa
1/4 c. + 2 T. Chocolate Hershey’s Cocoa
1 3/4 c. Dates (by Date Lady powdered.) :) 
2 t.. baking soda 
1 t. Baking powder 
1 t. Sea salt 
2 t. Espresso coffee
1/2 c. Coconut oil - melted
2 Eggs at room temperature
1 T. Pure vanilla
1 c. Buttermilk at room temperature
1 c. Boiling water 

* Buttercream Chocolate Icing with Monkfruit 

1 1/2 c. Softened salted Land O’ Lakes Butter 
3 1/2 c. Monkfruit with Erythirol *see note 
3/4 c. Cocoa powder 
1/4 c. Half and half (more or less to desired consistency)
1 T. Pure Vanilla 
1 bar 60% Girhidellhi Cocoa Bar (grated 1/3 c.)

Preheat oven 350º.  Line two 8 inch cake pans with parchment paper. Spray parchment paper with baking spray. Mix all the dry ingredients together in a large mixing bowl and set aside. In mixer with paddle attachment, mix oil, eggs and vanilla until well incorporated. Add the buttermilk and mix to combine. Then, add the dry ingredients to the mixer with bowl of wet ingredients. Add hot waster and mix until thoroughly combined. Pour batter into cake pans and bake about 25 minutes or until a toothpick inserted comes out clean. Then set on cooling rack. Once completely cool, remove from pan. 

If time allows, freeze the cakes wrapped in Saran Wrap for 60 mins. - 2 hours. Then, unwrap and ice the layers. It should be delicious and more smooth icing the cake! Once iced and ready, sprinkle the grated Girhidellhi cocoa on top. Perfection! Enjoy! 

*note: Monkfruit and Erythirol - this is healthy and keep blood sugars normal. Research it. Amazing! And delicious consistency and flavor!)

Best Vegetarian Lasagna Eggplant, Spinach, Keto, Paleo #glutenfree

Hey, Y'all! It's been a while since we have talked about one of our favorite things - Recipes! Even though I share more real time over on my Instagram, I wanted you all to have this best recipe in a convenient place for you to make it as often as we do or will!



When we were newlyweds, I was vegetarian and this was one of our favorite Italian recipes! A vegetarian magazine that I likely got from Vegetarian Times magazine or some other cookbook. Recently, I remembered how much we loved it and decided to recreate it.








As most food bloggers do, I had it re-created in my head before I could get home to write it up! I did what I encourage you to do - get in the kitchen and try. Don't overthink it or question yourself.

*Remember My "Mixing with Mali" 3 Favorite Rules for Good Cooking: 

1) Cook what you like! 
2) Use ingredients you like; and 
3) Don't be afraid to try and go with your own instincts! 
Enjoy! 

We call this the vegetarian lasagna, gluten free, pizza lasagna! :)


Best Vegetarian Lasagna! 

1 Eggplant, sliced in circles (not lengthwise)
5 -6 .oz Spinach
4-5 garlic cloves, minced
Olive oil
28 .oz Glen Muir Marinara Sauce (our favorite)
12 .oz Mozzarella Cheese chredded
16 .oz Ricotta cheese
1 egg
3/4 c. Parmesean Cheese grated
parsley
Sea Salt
Pepper
Cayenne
Basil
Rosemary
Thyme



*Preheat Oven 375 degrees. Use an oblong pyrex dish.

First prepare items as stated above, slice, mince, grate, etc. :) For all of my spices, mix to taste. Whatever you like add it. I add a lot of cayenne and pepper. Add what you normally would and enjoy.

In small bowl, mix ricotta cheese, egg, 1/2 c. parmesan (reserve 1/4 for the top) add parsley and mix evenly.  Add spice, salt peppers, and herbs to taste. Stir well and reserve. In cast iron pan, grill/sautee eggplant in olive oil and add sea salt and pepper. Set aside. Then, sautee spinach and garlic in olive oil. Reserve in pan.



Basically, layer in the pyrex. Start with the eggplant, marinara sauce,  ricotta mixture, marinara, spinach and garlic, marinara, top with mozzarella cheese and parmesan cheese. Bake for 20 minutes covered and 10 minutes uncovered. Or, until hot and bubbly where the cheese has melted.

Our Amazing, Best Gluten Free Chocolate Chip Cookies





Our Amazing, Best Gluten Free Chocolate Chip Cookies 

We LOVE chocolate chip cookies for a special occasion or for a family night. We perfected our recipe a while back and were set until we wanted to make it a gluten free version. We succeeded! We love this one even better! The nutty flavor of the almond flour makes it even more decadent! It gives it a little bit of a short bread texture with all of the richness of a classic chocolate chip cookie. We all liked it so much better.


It’s pretty simple and foolproof. Tonight, I am writing the recipe as I make the cookies again! :) So, we are using semi sweet chocolate chips and enjoy those. We do like to use Ghirardelli when I keep them on hand.  


3 c. almond flour (or gluten free flour we like King Arthur’s)
Few dashes of salt
¾ t. Baking soda
1 c. Butter softened, salted (16 T.)
¾ c. brown sugar
½ c. white sugar
2 t. Vanilla extract
2 eggs room temperature
1 bag chocolate chips (we prefer semi sweet or dark chocolate Ghirardelli)
1/2 c. pecans (for those of us who can't do without southern pecans)


Preheat oven at 350 degrees.




First, measure together flour, salt and baking soda ingredients. Sift with your clean mixer. :) Then, set aside in a bowl. In a large mixing bowl, cream together softened butter and both sugars. Barely cream together and then add the vanilla and one egg at a time. Cream just until ingredients are mixed. Then add ⅓ of the flour mixture at a time while mixing. Once butter mixture and flour mixture are all mixed. Stir in, with a wooden spoon, the chocolate chips evenly.


*My sweet tip! Spray an ice cream coop with coconut oil and use to dip cookie mixture onto a silpat mat. Bake for about 11 minutes. Or, until brown on the edges. Enjoy! :)


I’m so thrilled I wrote this recipe up to share and now it is ready for my family any time we'll be mixing with Mali! :)

Best Ever: Chicken, Spinach, Andouille Sausage, Navy Bean Soup Homemade

Winter's Favorites has a Winner!  My Turkey, Spinach, Andouille Sausage, Navy Bean Soup is Homemade and has changed my Winter.  Really.  And since I am making it all the time, I perfect it each batch.  It is so healthy and tasty.  It is a Winter Winner here.  Oh, in this picture, I have added Artichokes.




Everyone is loving it on Instagram and Facebook so it is time to share the good news. It's homemade and it is easy.  Best of all, it is healthy and low calorie.  I said it was perfection.

Chicken, Spinach, Andouille Sausage, Navy Bean Soup

Ingredients:

3 T. Olive Oil
1 pound Chicken Breasts
1 pound Andouille Sausage Trader Joe's (sorry not pictured)
1 medium onion, diced
garlic cloves to taste
1 Q. Chicken Broth
2. C. Water
Cheyenne Pepper
Sea Salt
Fresh Ground Pepper
Oregano
Thyme
1 Jar Tuscan Giant White Beans Trader Joe's
16 .oz bag Fresh Spinach

Most of my ingredients are from Trader Joe's.  I just happened upon these ingredients and put this soup together and we love it.


Over medium heat, sautee first five ingredients until grilled lightly brown.



Add chicken broth and water.  Then mix in the dry spices.  Simply simmer for thirty minutes.  Here I have a picture of the Spinach I just added in.  However, I have since added it at the end and it stays much more fresh and has more nutrients.  So Simmer the 30 minutes first, then stir Spinach in after you 
have turned off the heat.  


Then stir in the Tuscan Giant White Beans until they are hot.  Turn off heat.  Stir in Fresh Spinach.  Enjoy! :)

Here is my picture the night I added the Artichoke! It is such a hearty and filling soup and it is gluten Free and healthy.  Lots of proteins and vegetables.  Once I even added carrots and it was fab.  You could add gluten free noodles at the end or even some cooked rice. I enjoy the flavor with the white beans only as my starch.

My advice, do not be afraid to add or subtract ingredients or spices you like.  I assure you, this is impossible to mess up.  Just enjoy! And stay warm.  We are having the coldest Winter here in North Carolina.

Shaklee180 Four Month Update - Progress

Greetings!  Everyone's journey and dream is different.  I love this quote from Matt Kearney's Soul Surfer song, "Runaway."  "Nobody knows the trouble we've seen.  Nobody knows the price of this dream."  It has been a long road, and I am so thankful things are coming together in my wellness.

We are just completing the Fourth Month of our Shaklee180 TurnAround.  I am loving the products and the results!  Here is my first picture taken this week.

Every month, I take a few pictures at the gym before my workout to see the visual progress. I am excited to see the four months of hard work paying off.  I have a way to go to complete my journey and total goals.  However, I am meeting my monthly goals. And I feel great. 


I am continuing Pilates once a week, Running 2 or 3 5ks once a week, and swimming some.  Also, I enjoy doubles Tennis with my family.  And recently, a girlfriend and I began Tennis - singles - once a week for an hour.  I am having fun and encourage anyone out there to get moving.  Your body quickly remembers the fun of being active and will thank you.  You deserve it.

One thing I am excited about is the slow but consistent change loss.  I feel like I can do this forever.  Great news. Right! 

Here I am a happy Camper Beachside at our Hotel at Hilton Head Island after visiting this Lighthouse there with my family.  I love seeing my happy and active self again.  Very thankful.  




Shaklee180 is very clear cut to use and simple.  I have not been perfectly on the plan. However, consistently going back to these base meals, protein bar and protein fruit smoothies has made a difference. I use them consistently when I am in town.  I do take a couple of days to have three normal meals when I am feeling like I need to mix it up.  It works.  Yes, I do continue my journey Gluten Free. - I am about 90% Gluten Free and chose GF for diet and wellness purposes.  I am not Celiac.  

Here are some pictures I love.  My sons and me earlier this month.  So happy and thankful.  We had Brunch out at Another Broken Egg, a fun restaurant founded in Louisiana.  I went, I ate and I didn't get off plan and it felt fabulous.  I had two poached eggs, half a serving of turkey sausage and fruit. 




 This was taken at the Top of the Lighthouse at Hilton Head Island, one of my favorite places.  I reminisced my days of living on this Island as a college girl just graduated.   It was wonderful to be back full-circle with my own children - our family in tow.  I love this picture.  And my white jeans are really loose. Happy. 


By the way, the Numbers! ;). here is the scoop in # form: lost -4 .lbs!!  However, my measurements are almost the same. My clothes fit well. And I can see a difference. So, I am learning, again, not to put too much stock in just the numbers on the scale or the tape measure. Here's to a successful Minh and to losing some inches again this month! Right!

Shaklee180 Three Month Update Numbers Y all

Exercise-wise, I am loving Running consistently again!  Happy dance/run! :)  And I love my Pilates classes.  These are some of my favorite things. However, I did swim my first round of laps for the season and that was just like riding a bike. I LOVE swimming laps for a great Summer exercise. So I will be mixing these up for sure.

This is the update post on my first three months on the Shaklee180 Blogger Program. I have loved this experience.  Each day I love the Shaklee180 Meal Bars and Smoothies.  Occasionally, I do not have them.  Overall, I have been consistent on the plan.  I love the Peanut Butter and Chocolate Bar for Breakfast with my Coffee and Water.  If I miss a big hot breakfast, we have breakfast for dinner. :) And I skip the biscuits and gravy. :)  I do have a little bacon and eggs.  Or lean ham and eggs with a half a serving of cheese. I don't miss toast.

For lunch or dinner, I have a Shaklee180 Fruit Smoothie including the protein powder and spinach with almond milk.  I really enjoy these.  They hit the spot when I am not hungry or when it is hot outside.  And I make them an ice cream consistency and eat it with a spoon sometimes. Treat for sure. Yes, I have continued Gluten Free for eleven months now and I love it.  Again, I am not celiac so there are some splurges. Yet, overall, I love the benefits of the gluten free diet for my body.

Since I love to really hold myself accountable with a little photo for you.  Here we go, this was taken this morning after Pilates by a little lady who (gasp, they are still out there) didn't know what an iPhone was.  Her kindness, to offer to take this for me so I wouldn't have to take a mirrored version myself, well made up for her lack of techyness. :)

See, why I work at all of this!  Pear shape.  These are, as my sisters and I say, "birthing hips."  Thank God since these carried Twins full-term.  Since the Twins, they HAVE seen leaner days, which we are well on our way to seeing again soon. Right!

Shaklee180 asked us to share what we love about ourselves, I do love my smile and eyes and right here, the way my waist looks tiny when I toss my hands on my hips in the "don't I look great" even though I am not near finishing my goal yet. :)

One thing I learned this month is that I do better maintaining and losing my weight if I have my meal during the day. :)  However, I do enjoy sitting down to a candle light dinner with my family any chance I get.  So, I do this some and notice the results.  So I mix it up a bit.

It was a great month.  I was a little slow losing, I did lose and I am thrilled.


This pic confirms that I lost just a 1/2 inch in the hips this month.  Y'all a loss is a loss.  At this rate, catch me next Summer for my final hip goal reached. :)  We are going to work on it until we get it! :)

And I did lose 1 inch in the waist!  Yea, waist. Thank you.  So you see, I will be quite busy finishing the next three months of the Shaklee180 journey.

Gluten Free Meal Ideas and Pamela's Products


With a New Year comes New Year's Resolutions.  At Carolina Mama it surely does.  All my life, I have loved writing - writing in general and definitely a fresh, clean slate for New Year's Resolutions.  Healthy living and wellness are always a part of my plan.  And thanks to my Daddy exercise and staying active is part of the fun.  So earlier this year, I loved sharing my "Best Kept Diet Secret Ever."
After all, you know it is a delight for me to share good news and good things.

... to make our Christmas Red Velvet Cake this year!  Yes, we used the food color.  Yes, It was divine!  Yes, this is a once a year treat. :)


A few of you had some Gluten Free questions and I wanted to reach out and address them and see if I can help you along your own journeys to wellness for 2013.

"How do you shy away from foods you no longer eat?"  This is a great question.  For me, I made the decision to go gluten-free for health reasons.  I do not have celiac disease.  For me, I wanted to benefit from omitting gluten from my diet.


As always, when I embrace something I do it whole heartily.  So it was only natural for me to research and learn all I could about my decision.  I read "Wheat Belly" and "Food, Inc." and "Skinny Girls Don't Eat Salads." :)  I liked the name of this one even though I love a good salad.  However, I LOVED her theory to "stop starving and eat."  Then, I, through a girlfriend, I discovered Pamela's Products!

Pamela's Products are fabulous, easy to use and oh, so tasty!  The baking can be tricky in the South with humidity.  However, the flavor Wins and got us through our 1st Christmas Gluten-Free! With flying colors, no less.

At any rate, my first goal was to 'go gluten free' so I focused on what I was eating exclusively.  This Southern Girl has to guard against volume so next was portions. And that did come with time and I still have to gauge it.  I enjoy real food.  About this time, I discovered the fabulous blog, 100 Days of Real Food.  It is awesome for focusing on the many real food choices out there.

I made the decision to enjoy all of the wonderful foods that are gluten-free.  And avoid the gluten, as you know the high fructose corn syrup, corn syrup and other fillers and additives. whew, it is a journey. It is eye opening to see what the "food industry" has done to whole foods.

Soon and very soon for me, my body lost any taste or craving for all these crazy fillers.  And thanks to my precious Mom and amazing cook, I enjoy healthy foods so it was not difficult to focus on real food.

Here is my key answer to the question highlighted above, the less you eat this 'stuff' the more you do not miss it.  So true!  I thank heavens - literally - I do not have crazy cravings. I am convinced it was the junk and additives in the food that created these cravings.

How much exercise are you doing and how does it effect your diet?  I love exercise though I have a very full life.  I do make it a priority and exercise 3-4 times a week.  I prefer the weeks when we can be active 5-6 days.  However, because I do love exercise and being active, my goal right now is working on my eating and healthy habits more than just exercise.

When I was younger, uhum, I used to be able to exercise and that would keep me in shape. :)  Now, I know I need to focus on my healthy living and eating!

Could you share what your daily meals look like?  My meals are simple real foods.  When we dine out, it is very doable as most restaurants even have gluten-free menus.  Or, you can specifically order a certain thing custom to your GF diet.  Even Chick-fil-A has a Gluten-Free menu which is helpful with travel.

Breakfast:  We focus on protein.  We love eggs.  I will make an "Egg Bake" which is basically a crustless breakfast quiche and it lasts a couple of days with everyone heating a portion each morning.  These have anything like eggs or egg whites, turkey sausage, lean ham, a variety of peppers, broccoli, spices, cheese.  It is hearty. I have Grapefruit Juice (1/2 c. and pure grapefruit juice only, no concentrate.  So I just buy the Simply brand).  I love steel cut oats with a little butter or cinnamon sugar.  I also eat thinkThin bars on the go, they are gluten-free and pack 20 grams of protein.  So I am satisfied and love breakfast.  I always have water and coffee, we brew Starbucks at home, with a little honey and cream.

Lunch:  we have been loving homemade soups. I make a hearty soup like Black Bean soup, Chicken and wild rice, a beef and bean chili, etc. in the crock pot and we have lunches for a couple of days. I also like a grilled chicken salad with carrots, broccoli, etc. and a yogurt based dressing.  We are not dairy free so we add cheese and nuts.  Rice Cakes are my friend. I have always liked them. I put spicy mustard and turkey and cheese one with an apple and/or popcorn.  Again, I remember protein: tuna salad, egg salad, lean meats, and other proteins and fruits and vegetables are totally more filling and satisfying.

Snacks: We love fruit, apples and clementine are #1 now, and almonds.  We love string cheese. So I may have almonds, apples, a fruit and/or protein smoothie, or a KIND bar which is 5 ingredients of dried fruit and nuts with honey. Easy for transporting and I keep one or two in my purse or car for when I realize I am hungry on the go.  They also sell them at Starbucks so I have been known to order my Iced Americano (coffee, skim milk and a raw sugar) and a KIND bar. Perfection and guilt free.

Dinner:  Grilled Chicken, Salmon, Fish, grilled vegetables, wild rice.  Taco night is black beans and beef corn shell tacos with all the fixings in pure forms/ no preservatives in homemade or organic salsas. Trader Joe's has awesome salsas that we keep on hand.  We add lettuce and sour cream or greek yogurt, plain.  Spaghetti night is usually a turkey meat or turkey meatballs with my marinara and rice pasta.  Rice pasta is a little tricky to cook - just avoid over cooking. And do not rinse with water. I use a fork and a little olive oil to toss before serving.

Dessert: We love ice cream. So I get ice cream withOUT gluten and withOUT HFCS.  You have to search for it and read the labels. Now, it is a habit to read the labels and the boys and I have a blast busting the brands and finding the one or two withOUT the additives.  Again, Trader Joe's has a great ice cream and other Gluten-Free options.  I have to be careful with ice cream because with pure ice cream ingredients comes more fat!  So portions is again something I strive for regularly.  Also, my favorite dessert and sweet tooth solver is my 73% dark chocolate almonds. I love them!

Hot herbal teas with honey are a part of our nightly routine. And a ton of water from our Britta. We love to fill up water bottles or refillable cups we use at home.  Lots of water.  The boys drink milk.

Hope this helps. I will make an effort to share more food ideas. Typically, there is an option for gluten-free for most recipes.  And cooking at home is so fun because spices do all the work and no crazy preservatives, additives and crazy stuff in our foods.

Panera Black Bean Soup and Pop Chips

Welcome to my Better-Than-Panera Black Bean Soup!  Seriously, I have loved this simple and healthy soup at Panera for some time.  Also, I have wanted to recreate the recipe myself for quite some time.   Isn't she beautiful!  It's a meal, too.  So that's a win!


Finally, I tried my hand at it and I LOVE it!  You will, too!  This Soup Recipe is healthy and easy to make.  Can you hear me, as a Wife, Mom, Homeschooler, and Blogger, I LOVE to cook and make healthful recipes for my family.  Yet, I desire to be efficient in the kitchen.  Right!


Better-Than-Panera Black Bean Soup

(3)  cans Black Beans (you can cook up your own from scratch; I use just black beans)
(1) Refried Beans
(1) Rotel - Hot :)  I know!  New Orleans Girl here.
1/2 Onion
4 Cloves of Garlic
(your choice how much onion and garlic)
Olive Oil
4 c. vegetable broth
1 t. Chili Powder
Cracked Black Pepper, Sea Salt to Taste
*water / optional if you like thinner consistency (once I used 1 T. of corn starch to thicken)
Garnish: Sour Cream, Cheddar Cheese and Pop Chips! :)  We love them!

Directions:

Sautee onions and garlic in olive oil in stock pot.  Slowly add vegetable broth and water; with a whisk add the refried beans; whisking vigorously until smooth. Once smooth, add in the black beans and rotel.  Stir evenly and add in the spices.  Simmer until hot.

Serve with garnishes to taste.  And fall in love, again and again,  with the soup like I did. Add Pop Chips in Nacho Cheese and you've got the perfect healthy, easy Mexican Dinner! :)

We love Pop Chips and the new flavors are phenomenal!  We LOVE them!  The Nacho Cheese are a favorite at our home!


My Tigers LOVE the Ranch and the Salsa Pop Chips!  I adore the Chili Limon Tortilla Chips!  

You all know I am now Gluten Free for 4+ months now and this whole dinner including 
the Pop Chips makes a fine Gluten Free meal.
