Chuy's Parkside Commons, Cary, NC Best Tex Mex and Homemade Guacamole, Tres Leches

Chuy's Tex Mex hosted us for a Chuy's experience at their Chuy's Parkside restaurant. It is the newest Chuy's in the Raleigh, North Carolina area! We loved getting together and the food and atmosphere was fabulous!

It was a beautiful Sunday afternoon when we arrived for an early dinner with our Auntie from New Orleans visiting! We were excited to enjoy Chuy's Tex Mex Parkside with her!   


Naturally, we got a photo together right away to commemorate our fun visit and 
all the good food that was surely to come. 


We love all of the festive decor at Chuy's, too! These chili peppers are a lively addition to the 
ambiance! 


You know, I love any opportunity to get our two visiting together and here they were with the hip entrance of Chuy's to welcome them!


You can see the fun spirit that is Chuy's! We were ready to start ordering. xo these my guys again! We 
didn't have to wait at all for dinner! Chuys' has plenty of unique seating throughout. 


We loved watching them make homemade Tortillas! These were so fresh and delicious! 


The handmade, fresh Guacamole at Chuy's is a favorite! We crave it! The guacamole is a meal in itself! We love enjoying real and homemade foods so Chuy's is a perfect match for us! 


Then, there is the boom boom sauce which is a unique sauce to Chuy's! It is a little 
spicy so just enough kick. 


So you know, there is a sauce for everyone at Chuy's! How about this! 



Here is more information on the homemade sauces. It is a great part of the meal that we enjoy so I wanted you to see their homemade sauce list! Check this out! All the Chuy's Sauces include TexMex, Ranchero, Tomatillo, Deluxe Tomatillo, Green Chile, Deluxe Tomatillo, Quest and Boom Boom!



We enjoyed fresh Lemonade Arnold Palmers which were perfect for Mexican food! Here more of the sauce fun.


Auntie loved all the sauce choices! It was fascinating to hear all of the recipes by the Manager!

 Here is the Classic Cheese Quesadilla!


My Quesadilla lover added steak to the side. This was a delicious steak! Of course, more sauces were used with the steak! 


Auntie and one of our sons enjoyed the special steak burrito which looked incredible! They both loved this dinner! These burritos are homemade, 12: flour tortillas stuffed with refried beans, steak, cheese and your sauce of choice. 

They are served with the refried beans and Mexican rice, shown here. 


Look at these Chuy's Special Nachos! These were incredible! And they made two meals! 



Here is the Chicken and Cheese Enchillada Boom Boom sauce meal. It is a Chuy's specialty!
It was wonderful to have leftovers for lunch the next day! :) The servings at Chuy's are generous.

We were introduced to their amazing dessert specialties! It truly took 5 spoons for these desserts after the amazing meals we enjoyed! 

This is a real Tex Mex delight - the Tres Leches! What a surprise this was! 
 



This was a most delicious and smooth cream brulee ever! :) I typically don't try cream brulee.  They delivered these and I did try it. What a pleasant surprise. Everyone enjoyed it and the fresh 
whip cream was so refreshing and tasty.

Chuy's North Hills Green Chile Festival August 17th - September 6th

Chuy's North Hills Raleigh is a TexMex destination. Our family loves Chuy's food, atmosphere and the customer service. We had a great time helping kick off the Chuy's Green Chile Festival here in Raleigh. We were delighted to celebrate with them.


Fat Daddy's Green Chile Enchilada

You can see why we loved it. Boulder Mt. Man found a favorite in the Fat Daddy's Green Chile Enchilada. It was his favorite thing. The flavors and variety were what he loved. Spinach, Mushrooms, Cheese, Grilled Chicken - a nice blend. A few jalepenos always make it great.

So, if you are local, here's what you're looking for in North Hills. And there is ample free parking right across from the front door of Chuy's.

Chuy's keeps it fun all the time. Here, they have it decorated for the Green Chile Festival and with lots of Summer love on the patio. This keeps the kids happy and the parents.


 We love the fun and festive atmosphere at Chuy's.  We enjoy the fun spirit. Chuy's is great for family dinners. There is a lot of food which is great for a family with teen boys! :)  Chuy's is great for celebrations and business lunch or dinners

Our #GreenChileFest started like this with Chuy's homemade Guacamole and a spicy jalepeno ranch dip, a teen approved and loved queso dip and their spicy and excellent salsa!  Gracia! 

Chum's Green Chile Festival Aug. 17th - Sept. 6th, 2015.


I loved the Combo Fajitas! These were grilled and marinated to perfection.  Look at the this! Sizzling with all the flavors and onions and peppers. Add the handmade tortillas ....



The Crispy Tacos were Classic and a teenagers favorite.  He prefers the meat blend with the Mexican cheeses and lettuce. 


Cheese Quesadillas with all of the fixings were grilled just right with the handmade tortillas. 


Another great glimpse of the incredible fajitas with accompaniment. Just so you know, the leftovers heat up nicely for dinner! :) 


Here you can see how fun and eclectic the Chuy's atmosphere is. This is "our" booth. :) I still cannot believe our boys are getting so grown. High School. We love good times, food and fellowship together like at Chuy's. 




Look at the handmade Tortillas being made in house at Chuy's every day. 

"A fresh tortilla is the key to any great Tex-Mex meal. Here at Chuy's, we have our very own tortilla experts that hand-roll your tortillas all day long at our authentic comal. They make the dough from scratch every morning and roll each and every flour, corn and blue corn tortilla that you enjoy." 


We do love the different dynamics at Chuy's North Hills. Their patio is great and is adjacent to the MidTown Green at North Hills. Concerts are held here and other entertainment.

 One of the rooms at Chuy's had a fun hubcap collection. Mine were intrigued.  The lighting was fun. Enjoy the great atmosphere and homemade Tex-Mex established in Austin in 1982.


We love all of the sauces and extra flavors at Chuy's. You will find unique flavors and menu items alone with unique service and decor.

A North Carolina Summer

Every Summer I think we can somehow capture it all - the sunshine, the rain, the sweet peaches, the sunrises, the sunsets, the beach, the mountains, etc. -  in a bottle and make it last forever. This Summer has launched and run - barefoot, of course - more quickly than ever.  This post is a random sharing our our Summer from the latest pictures on my iPhone. Or, Instagram.  So you know, real life, no staging. :) 

We savor the moments. Lots of family and friend time. 



Date nights have been a lot of fun this Summer. I am thankful for any time we can get together. 

The Happy Couple

Here is one of the many Sunsets that I randomly took and share because they are so beautiful and peaceful… we have spent many a Summer night watching the Sunset wherever we are. A lot of the times we are sharing a great sunset right in our own backyard, barefoot while chasing fireflies.


Our children are blessed with great friends and a fun community at our church. It helps 
that the Middle School Pastor is fun and plans nights like this for the children.

I even had a little television appearance. This was so fun to be a Guest on 
The Joy Sutton Show in Roanoke, Virginia. 


My Family got to join me on the trip and we had such a great time at the 
Joy Sutton Show studio. 


We loved getting away to the Blue Ridge Mountains. It made us reminiscent of our 
last trip to Colorado to see the Rocky Mountains. 


Here is the Roanoke Star. The world's largest illuminated, man-made star! :)
It was beautiful and we even had a picnic there. 


We spend a lot of time road tripping. 



    Our boys play a lot of Pool Basketball…we love it. We also play as a family. And yes, this year, this year 13 for our boys, they beat Mom!  So they do grow up.


Our Peach Harvest kicked out our sweet Summer!  We LOVED harvesting our 
peaches together as a family.



They made amazing breakfasts. 


My Homemade Peace Pie was so delicious and pure tasting. I used as few 
ingredients and our fresh peaches, skin on and we loved it. 


We shared with our incredibly kind and fun neighbors! 


We all contributed - "many hands make light work." 


We loved continuing our Restaurant Reviews and promoting all things North Carolina. 
That included our visit to Chuy's Raleigh this Summer. 



Fashion continues on all Summer. However, most days included my Lands' End Swimsuit and a fun BJ's or Fresh Produce Swim Coverup.  Some fun Summer Fashion days like this…. yes, Tieks, always.

There were even Summer days that included a little accidental dressing alike for 
a Starbucks date!  Including Starbucks Green!  Preppy Green. Oh, Happy Day! Fashion!

La Carreta's. My cousin's daughter goes to Liberty and gave us this fun 
recommend. Great Mexicana and fun atmosphere.

We loved visiting Liberty University in Lynchburg, Virginia. Such a blessing and 
high tech place. The new Library is outstanding.

My precious Cousin and her husband were in town so a fun breakfast out with one of my favorite cousins and girlfriends was a Summer morning highlight!  Add a little Flying Biscuit, Raleigh, and everyone was happy!!!


We loved canning our Peaches together! Sweet tastes of Summer.
