Thanks for sharing the cornbread recipe!! I too have joined weightwatchers - haven't gained yet but have come close...and I hold my breathe waiting to see the results each time!! But love it nonetheless!!

I'm writing out my New Year's Day menu to get ready to go to store and I just had to come by and get this recipe to do this cornbread for the day.
If you calculate the points correctly for that, it's 2 points each..
Is this the old point system? It's actually 2 new points (Points Plus) per muffin. Plus it doesn't say what size can of cream corn -- but anything more than 4 tablespoon of cream corn in the recipe pushes the recipe to 2 points per muffin sadly. That's still not bad though.

I tried this recipe today. I used 1 cup (16 tbsps) Aunt Jemima's self rising buttermilk cornbread mix.
one 14.75 oz can delmonte cream style corn low salt (70 cal per 1/2 cup serving) and two eggs. I added 6 drops of stevia sweetner. mixture was a little soupy. I sprayed muffin pans with coconut cooking spray (something like Pam). I put two tablespoons of mix in each muffin pan and baked at 400 degrees 13-15 mins. It made 15 servings. it says one serving is indeed 1 point. Delicious and very moist.
I have cornmeal. But what is self rising cornmeal? Can i use just Conrmeal?
Self rising corn meal can be made by mixing 1 cup corn meal with 1.5tsp bakng powder and .5 tsp salt.
