SWEET & SPICY PEACH PECAN SUNDAES
Magnolia Grill's of Durham's Chef Karen Barker Recipe
4 servings
Prep Time: 10 minutes Cook Time: 10 minutes Stand Time: 15 minutes
1 lb. frozen sliced peaches, thawed
1/3 cup sugar
1-1/2 Tbsp. prepared hot pepper jelly OR 1-1/2 Tbsp. peach jelly plus 1/2 tsp. finely chopped seeded jalapeno pepper
1/8 tsp. ground cinnamon
1/8 tsp. cayenne pepper
8 pecan shortbread cookies, crumbled
2 cups Breyers® All Natural Peach Ice Cream
1/2 cup sweetened whipped cream
Bring peaches, sugar, hot pepper jelly, cinnamon and cayenne pepper to a boil over medium heat in 2-quart saucepan. Reduce heat to low and simmer, stirring frequently, until peaches release their juices and are heated through; cool to room temperature.
To serve, arrange 1 crumbled cookie into each serving dish. Top with peach sauce, then Breyers® All Natural Peach Ice Cream. Sprinkle with remaining crumbled cookies then drizzle with remaining peach sauce. Garnish with whipped cream.
This recipe was divine! I loved it! Just a hint of spice and full of flavor! Thanks Breyer's and Karen Barker for the invite!
