Lawry's Marinade Giveaway Prize Pack Labor Day Fun

Summertime has been sizzling around here thanks to Lawry's! This made me smile when I was asked to participate in the Flavor Forecast 2010. My freshman year of college, our family had an amazing meal I still remember at the Lawry's of Chicago! That was an experience. Fine dining magic.

Back at home, we love Lawry's Grilling Marinades.

Lawry's Spices and Grilling Kit Flavor Forecast Grilling 2010

In fact, I wanted to share this Lawry's Marinade Recipe:

Tuscan Grilled Lamb Chops with Warm White Bean Provençal

12 rib lamb chops (at least 1-inch thick), trimmed
1 cup Lawry’s® Tuscan Sun-Dried Tomato Marinade, divided
1/2 cup fig preserves
1 teaspoon McCormick® Gourmet Collection Rosemary, Crushed
White Bean Provençal:
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon minced garlic
1 teaspoon McCormick® Gourmet Collection Rosemary, Crushed
1 teaspoon McCormick® Gourmet Collection Sicilian Sea Salt
1/2 teaspoon McCormick® Gourmet Collection Black Pepper, Coarse Grind
1/2 teaspoon McCormick® Gourmet Collection Thyme Leaves
2 cans (15 ounces each) cannellini or white beans, drained and rinsed
1 cup diced tomatoes
1 tablespoon chopped fresh parsley
1. Place lamb chops in large resealable plastic bag or glass dish. Add 3/4 cup of the Marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. Meanwhile, mix remaining 1/4 cup marinade, fig preserves and rosemary in small bowl. Set aside.

2. For the White Bean Provençal, mix oil, lemon juice, garlic and seasonings in small bowl until well blended. Place beans in large skillet. Cook on medium heat 5 minutes or until heated through, stirring occasionally. Add vinaigrette; toss lightly. Remove from heat. Add tomatoes and parsley; toss lightly. Keep warm. Remove lamb chops from marinade. Discard any remaining marinade.

3. Grill lamb chops over medium-high heat 5 minutes per side or until desired doneness, brushing with fig mixture during last few minutes of cooking. Discard any remaining fig mixture. Serve lamb chops with White Bean Provençal.

SImple North Carolina BBQ Chicken

Here's the latest BBQ Chicken we're eating in North Carolina - well at least at Carolina Mama.

You will not believe how easy it is. It is so easy you'll make it asap! You may call it Cololina or Carorado BBQ because the recipe came straight from my mother-in-love from Colorado! :)

Really! She is a great cook and she offered to make a great BBQ Chicken for the family tonight. I figured we were going to the store for a few items. Instead, she said this:

BBQ Chicken

5 Trader Joe's Chicken Breast Meat
1/2 bottle of favorite BBQ Sauce - we use Kraft Honey BBQ
Your Crock Pot!

You guessed it - literally place the chicken in the crock pot and cover with your favorite BBQ sauce and cook for three hours. Then shred the chicken and stir into the remaining sauce and heat on "warm" for an hour.

Enjoy with NC Cole Slaw as seen in this picture above!! Or enjoy with steamed broccoli and rice like we did! This summer I plan to make a light version of Paula Deen's Potato Salad and enjoy with Sweet Tea!

What is one of your favorite EZ meals?!

This menu is published at "Tasty Tuesday!" As part of Tasty Tuesday, I am answering the question: When did you learn to Cook?! My earliest memories are in middle school when my Mom taught me to cook and make what else - Sweet Tea for Sunday Dinner! Then those memories formed more and I fell in love with cooking as a Junior High Student taking "Home Economics!"

Yes, I am a proud Home Economics student of the 1980s! Wow, sounding dated! It's a small world! When did you learn to Cook? Do you have a favorite BBQ recipe you want to share?!

Fourth Family Fun

The fourth was a great time with my family here. Here is a little glimpse of "Wave the Flag Cheesecake!" My niece did an awesome job. I think ours turned out better than Kraft. And the Paula Deen BBQ was great even with many of my own touches added. So it would accurately be called the Carolina Mama Deen BBQ! I know, flatter myself. It works. Really I think Ms. Deen would approve. I know my entire full house did.

We were able to see Fireworks even in between the rain and storms here. It was a double treat in that one of the Tigers, said the lightning is "God's fireworks!" Isn't it something how the children can make it real for us.

Grateful for my country, family and the God I love.

P.S. Register for Win It Wednesday Giveaway in my sidebar and Good Luck!

Wave the Flag Cheesecake by Kraft Foods and My Niece

Here's the "Wave the Flag Cheesecake" by Kraft Foods that my niece made here. She's a cutie and the 'help' was much appreciated.

Yes, the BBQ was a huge hit. Paula Deen would be proud. The family l.o.v.e.d it! I was quite happy, It is probably breaking some universal law, but I 'added to' Paula Deen's sweet hickory bar b que... and it was sweet. We added my version of a little more BBQ and for just a little more kick and more sauciness. I definitely liked it better. Everyone loved it.

The Tigers loved having their cousins in town and they got lots of football time in as well. Now, we're all up for a good nap.

North Carolina BBQ, Family, Fireworks, Fun

Just wanted to wish everyone a Happy 4th of July! We're celebrating with a full house - family from Charleston and Chicago and we're happy about that too! I have Paula Deen's Sweet Hickory North Carolina BBQ in the Crock Pot. Hmmm, does any one know of two 2.lb pork loins in one big Crock Pot is ok? Hmmm, she wondered, if Paula Deen's directions said to roast in the oven without a lid, will her conversion to a crock be okay. I have heard don't try anything new with you're on - say and you have a full house entertaining. However, the Crock Pot is fool proof right. And she needs the time to say put red, white and blue napkins in napkin holders....

If you know the answer please reply the reassurance would be priceless. Otherwise, I will give you the full report tomorrow. Enjoy your day!
