Memorial Day Southern Deviled Eggs

We're calling these...



Memorial Day Southern Deviled Eggs because I 'southernized' the Weight Watchers recipe! Pretty cool!

Curried Deviled Eggs
Ingredients
4 large egg(s), white shelled-variety
3 Tbsp plain fat-free yogurt (Greek!)
2 tsp curry powder, mild-variety
1/4 tsp table salt (Used extra)
4 sprig(s) cilantro, for garnish (exchanged for Paprika :)

My additions:
Spicy Mustard
Dill pickles
Vinegar :)
Black Pepper
Cheyenne Pepper - we like it hot :)


Instructions:

Place eggs in a medium saucepan and fill with enough water to cover eggs; bring to a boil for 2 minutes. Turn off heat and cover pan; let stand covered for 10 minutes on stove. Place pan in sink and run cold water over eggs until cool (no need to drain first); peel eggs and slice each one in half lengthwise.

Remove yolks and place yolks in a small bowl; mash with yogurt, curry powder and salt. Spoon yolk mixture back into egg white halves and garnish each with a small piece of cilantro. Yields 2 filled egg halves per serving.

Bike rides, school - yes, did you say Home School Moms hold school on a Holiday. Here's the beauty, we can run our schedule to work for us. And since we are wrapping up our school year, we'd rather hold classes today and head to the beach one day on Thursday. Make sense, an extra day at the beach - you bet! In fact, we're holding "Field Day" at the beach! Imagine that - talk about the ultimate Field Day! My students have worked hard, we're all ready! Speaking of the beach...

Honoring Those Who Have Served - Blades of Grass...


Today was an amazing honoring of those who have served in our Armed Forces, Army, Navy, Air Force, and Marines. And the families of those who have lost loved ones. This was a powerful video and song that was sung also.

I still remember with vivid awareness the story as told by the Lee and her husband, Bob Woodruff, the news reporter who was injured while covering the war in Iraq.

Memorial Day Weekend Family Style Bluegrass Festival

May 26, 2008 Memorial Day Observance
A military encampment representing three centuries of military tradition will be set up on the Capitol grounds. A wreath-laying ceremony in honor of those North Carolinians who served during times of war will take place at the Veterans’ Monument. 11 am- 4 pm
